Exotic Fruit Salad
- 23 cup orange juice
- 1 cinnamon stick
- 1 vanilla pod
- 6 cardamom pods
- 1 teaspoon sugar
- 2 tablespoons Grand Marnier
- 12 teaspoon arrowroot
- 8 ounces melon, cubed
- 12 small ripe mango, cubed
- 2 passion fruit, flesh scooped out
- 2 kiwi fruits, cubed
- 2 ounces fresh blueberries
- Place the orange juice in a saucepan with the spices, sugar and Grand Marnier.
- Bring to the boil and simmer gently for 5 minutes.
- Blend the arrowroot with 1 tsp water and add to the pan.
- Bring to the boil, stirring until thickened.
- Allow to cool before removing the whole Spices.
- Stir in the fruit.
- Serve chilled with creme fraiche.
- The remaining fruit salad will keep for 1-2 days in the fridge.
