Cheesy Party Pasta
- 2 lbs extra lean ground beef
- 3 garlic cloves, minced
- 2 medium onions, chopped
- 2 celery ribs, chopped
- 1 (15 ounce) can tomato sauce
- 1 (19 ounce) can diced tomatoes
- 1 (10 ounce) can sliced mushrooms, with juice
- 1 teaspoon oregano
- 1 teaspoon basil
- salt and pepper
- 5 cups rotini pasta (or any large shaped pasta)
- 2 cups nonfat sour cream
- 2 cups low-fat cheddar cheese, grated
- 2 cups lowfat mozzarella cheese, grated
- In a large skillet, combine beef, garlic and onions.
- Over medium heat, cook and stir until beef is lightly browned.
- Drain fat if necessary.
- Add celery, tomato sauce, tomatoes, mushrooms with juice, oregano, basil, salt and pepper.
- Bring to a boil, reduce heat and simmer 20 minutes.
- Cook pasta and drain.
- Preheat oven to 350F.
- In a 4 quart casserole (or larger) casserole, layer 1/2 the pasta.
- Top with 1/2 of the meat sauce, 1/2 of the sour cream and 1/2 of the cheddar.
- Repeat layers and top with mozzarella cheese.
- Cover and bake for 45 minutes.
- Remove cover and continue to bake until cheese has melted, about 10 minutes.
