Perfectly Juicy Roast Pork
- 1 14 kg pork shoulder, bone in
- 250 ml dry apple cider
- 250 ml chicken stock
- salt
- pepper
- Preheat oven to 220 degrees celsius.
- Score pork skin and fat (do not cut into flesh).
- Season to taste with salt and pepper.
- Place in roasting pan and roast until skin begins to crisp up.
- Add cider and stock to pan and cover with foil.
- Reduce oven to 150 degrees celsius.
- Roast for approximately 5.5 to 6 hours.
