Mince Meat Filling For Pies Recipe
- 4 lbs. boiled beef, lean, minced fine
- 8 lbs. tart green apples
- 1 pound suet, minced
- 3 lbs. seedless raisins
- 2 lbs. currants, picked over, wash & liquid removed
- 1/2 pound citron, cut up fine
- 1 pound brown sugar
- 1 quart. cooking molasses
- 2 quart. sweet cider
- 1 pt. boiled cider
- 1 tbsp. salt
- 1 tbsp. black pepper
- 1 tbsp. mace
- 1 tbsp. allspice
- 4 tbsp. cinnamon
- 2 nutmeg, grated
- 1 tbsp. cloves
- 1 pt. brandy
- 1 pt. Madeira wine
- Mix the above ingredients together thoroughly.
- Hot it on the range till heated through..
- Remove from fat.
- When nearly cold, stir in a pint of good brandy and a pint of Madeira wine.
- Pour into a crock, cover it tightly and set in a cool place where it will keep good all winter.
