Confetti Couscous

  1. Bring chicken broth, lemon rind, lemon juice and salt to boiling in medium-size saucepan.
  2. Stir in couscous.
  3. Remove from heat.
  4. Let stand 5 minutes for couscous to absorb liquid.
  5. Fluff with fork.
  6. Combine couscous, pimento, peas and almonds in large serving bowl.
