Barley Stew Recipe
- 1/3 c. each: Pinto beans, red beans, lentils, split peas, and black eyed peas
- 6 c. fresh water
- 1 (24 ounce.) can V-8 juice
- Garlic pwdr
- Instead of Salt (Health Valley)
- 1 minced onion
- 1/2 c. pearled barley
- Any favorite vegetables
- Soak beans overnight, covering with 2 inches of water.
- Drain off and rinse next morning.
- Simmer in a large pot soaked beans, water, V-8 juice, garlic pwdr, and Instead of Salt.
- Simmer, covered, over a very low heat for 6 hrs, then add in onion and barley.
- Simmer 45 min, then add in any vegetables.
- Simmer 30 more min.
- Serves 10.
