Light Healthy Lentil Cottage Pie
- 12 cup pasta sauce
- 12 stick celery, finely sliced
- 14 cup carrot, grated
- 12 cup spinach, shredded
- 1 cup cooked lentils
- 1 garlic clove
- 1 cup cauliflower
- 100 g pumpkin, peeled and chopped
- 12 lettuce leaf, for salad
- 13 tomatoes, for salad
- 12 cucumber, for salad
- 12 carrot, for sald
- Cook cauliflower and pumpkin.
- Prepare salad.
- Bring to boil pasta sauce with celery, carrot, spinach, lentils and garlic.
- Reduce heat and simmer for 15 minutes.
- Mash cauliflower and pumpkin.
- Spoon lentil mixture into bowls and top with cauliflower/pumpkin.
- Serve with salad.
