New Potatoes Simmered with Meat Soboro

  1. The new potatoes don't need to be peeled since their skins are very thin.
  2. Just simmer them as is.
  3. Scrub them well to remove any sand or dirt .
  4. If the potatoes are very small, use them whole.
  5. If they are about the size on an egg, cut them in half.
  6. Heat some oil in a frying pan and brown the potatoes.
  7. By browning them you can prevent them from falling apart while simmering.
  8. Push the potatoes to one side and cook the meat quickly there.
  9. Add the seasonings plus enough dashi stock to cover the potatoes.
  10. Skim off the scum, put a drop lid (otoshibuta) or small lid on top of the contents of the pan, and bring to a boil.
  11. Lower the heat to medium, and simmer until there's no more liquid left in the pan.
