New Potatoes Simmered with Meat Soboro
- 1 bag Potatoes
- 100 grams Ground meat (I recommend mixed beef and pork but you can use whatever kind you like)
- 1 Vegetable oil
- 1 Dashi stock
- 1 tbsp Sugar
- 1/2 tbsp Mirin
- 1 1/2 tbsp Soy sauce
- The new potatoes don't need to be peeled since their skins are very thin.
- Just simmer them as is.
- Scrub them well to remove any sand or dirt .
- If the potatoes are very small, use them whole.
- If they are about the size on an egg, cut them in half.
- Heat some oil in a frying pan and brown the potatoes.
- By browning them you can prevent them from falling apart while simmering.
- Push the potatoes to one side and cook the meat quickly there.
- Add the seasonings plus enough dashi stock to cover the potatoes.
- Skim off the scum, put a drop lid (otoshibuta) or small lid on top of the contents of the pan, and bring to a boil.
- Lower the heat to medium, and simmer until there's no more liquid left in the pan.
