BBQ Pulled Chicken Sandwiches With Pickled Jalapenos & Coleslaw

  1. For the chicken: In a medium sized pot, add the cooked/shredded chicken, BBQ sauce, and onion.
  2. Let it simmer over low heat for 10-15 minutes.
  3. Add more sauce or a bit of water if needed so all of the meat is coated.
  4. For the coleslaw: In a small bowl combine yogurt, sugar, vinegar, and all the spices.
  5. Stir well, taste and adjust seasoning if needed or add more vinegar.
  6. Toss all veggies together in a large bowl, add dressing and toss well to coat.
  7. Taste, and adjust seasoning again if needed.
  8. For the sandwiches: Place a good dollop of chicken mixture onto a bun, top it with coleslaw and pickled jalapenos.
  9. Serve with extra BBQ sauce for dipping and sweet potato fries on the side!
  10. Enjoy.
