BBQ Pulled Chicken Sandwiches With Pickled Jalapenos & Coleslaw
- 2 Boneless, Skinless Chicken Breasts, Cooked And Shredded
- 1/2 cups BBQ Sauce
- 1/2 cups Onion, Diced
- 1 cup Nonfat Greek Yogurt
- 1 Tablespoon Sugar
- 1 Tablespoon Vinegar
- 1/2 teaspoons Celery Salt & Celery Seed
- 1 teaspoon Pepper
- 2 cups Cabbage, Shredded
- 3 Carrots, Thinly Sliced
- 1/2 cups Red Onion, Diced
- 4 Whole Wheat Hamburger Buns
- 1/2 cups Pickled Jalapenos
- For the chicken: In a medium sized pot, add the cooked/shredded chicken, BBQ sauce, and onion.
- Let it simmer over low heat for 10-15 minutes.
- Add more sauce or a bit of water if needed so all of the meat is coated.
- For the coleslaw: In a small bowl combine yogurt, sugar, vinegar, and all the spices.
- Stir well, taste and adjust seasoning if needed or add more vinegar.
- Toss all veggies together in a large bowl, add dressing and toss well to coat.
- Taste, and adjust seasoning again if needed.
- For the sandwiches: Place a good dollop of chicken mixture onto a bun, top it with coleslaw and pickled jalapenos.
- Serve with extra BBQ sauce for dipping and sweet potato fries on the side!
