Mango Guacamole
- 4 whole Hass Avocados, Halved, Seeded And Peeled
- 2 whole Mangos, Diced
- 1 whole Jalapeno, Seeds Removed To Your Desire, Diced
- 1 clove Garlic, Grated
- 1/2 whole Medium Red Onion, Diced
- 1 whole Lime, Juiced
- 1 Tablespoon Coconut Milk, Plus More To Your Likeness
- 1/2 teaspoons Salt
- 1/2 teaspoons Cumin
- Pepper To Taste
- 1 Tablespoon Cilantro, Roughly Chopped
- Add the avocados to a serving bowl.
- Mash with a fork until it reaches the consistency you desire.
- Add mangoes, jalapeno, garlic, and red onion and lightly mix, trying not to break up the mango pieces.
- Add the lime juice, coconut milk, salt, cumin, pepper and cilantro and mix.
- Taste the guacamole with a chip and adjust seasonings as desired.
- Let flavors meld in the fridge for about an hour.
- Serve with tortilla chips!
