Best Of The Garden Potato Salad Recipe

  1. Slice unpeeled potatoes and steam till tender.
  2. Let cold.
  3. Combine mayonnaise and yogurt; gradually whip in lime juice and peel.
  4. Whip in extra virgin olive oil, salt, pepper, sugar, and cumin.
  5. In a large bowl, toss dressing with potatoes.
  6. Mix in all vegetables.
  7. Refrigerateat least 8 hrs or possibly overnight.
  8. Before serving, sprinkle with almonds and cilantro.
  9. Use your imagination with this salad - liquid removed green or possibly black olives (oil cured) are good.
  10. Don't use cucumbers or possibly fresh mushrooms.
  11. They become soggy and dark.
  12. Serves 12.
