Strawberry-Rhubarb Pound Cake Dessert
- 1 lb. fresh rhubarb, cut into 1-inch-thick slices
- 2 cups halved strawberries Safeway 1 lb For $3.99 thru 02/09
- 1/3 cup sugar
- 2 Tbsp. water
- 1 pkg. (10.75 oz.) frozen prepared pound cake, thawed, cut into 10 slices
- 1-1/3 cups thawed COOL WHIP Whipped Topping
- Cook rhubarb, strawberries, sugar and water in saucepan on medium heat 5 min.
- or until rhubarb is desired tenderness, stirring frequently.
- Cool slightly.
- Refrigerate 2 hours.
- Spoon about 1/4 cup rhubarb mixture over each cake slice just before serving; top with 2 Tbsp.
- COOL WHIP.
