Magic Avocado Sandwich
- 1 whole Bread Roll, English Muffin, Or Two Slices Of Bread
- 1 Tablespoon Dijon Mustard
- 1 whole Avocado, Peeled, Pitted And Sliced Thinly
- 1/2 whole Tomato, Sliced Thinly
- Salt And Pepper, to taste
- 2 slices White Cheddar Cheese (or Your Favorite Cheese)
- 2 whole Poached Eggs (optional)
- Heat your ovens broiler.
- If its not already sliced, slice your bread roll in half and toast lightly using your preferred method.
- Evenly divide your Dijon mustard and spread on one side of each piece of bread.
- Top each piece of bread with half of the sliced avocado and half of the sliced tomato.
- Season the tomatoes with salt and pepper, to taste.
- Top each sandwich half with 1 slice of cheese.
- Place the open faced sandwiches on a cookie sheet and broil in the oven until cheese is melted.
- If desired, top with a poached egg.
