Whole Wheat Raisin Nut Bread
- 2 c. boiling water
- 1 c. golden raisins
- 1 c. regular raisins
- 2 c. sugar
- 2 Tbsp. melted butter
- 3 c. whole wheat flour
- 2 tsp. vanilla
- 1 c. all-purpose flour
- 2 tsp. baking soda
- 2 tsp. baking powder
- 1/2 tsp. salt
- 2 eggs
- 1 c. chopped nuts
- Pour the 2 cups boiling water over raisins, sugar and butter. Let stand while preparing other ingredients.
- Sift flour, baking soda, baking powder and salt; add to raisin mixture.
- Add eggs, nuts and vanilla; beat well.
- Pour into greased and floured loaf pans (2 large or 4 small ones).
- Bake large loaves for 1 hour or small ones for 50 minutes at 375u0b0.
- Bread may be frozen and used later.
