Marshmallow Pineapple Whip Recipe

• 24 marshmallows
• 1/2 c. crushed pineapple, liquid removed
• 3/4 tbsp. lemon rind, grated
• 1 (10 ounce.) box vanilla wafers
• 1/2 c. whipping cream, whipped
• 1/4 c. lowfat milk
• 1/4 c. pineapple juice
• 1 1/2 tbsp. lemon juice

1. Heat marshmallows and 1/4 c. lowfat milk over warm water.
2. After melted, add in 1/2 c. crushed pineapple, liquid removed, 1/4 c. pineapple juice, lemon riand nd lemon juice.
3. Set aside till cool.
4. Add in whipped cream.
5. While it is cooling make vanilla wafer mix.
