Chinese Five-Spice Powder
- 10 whole star anise
- 1 tablespoon whole Szechuan peppercorns
- 1 cinnamon stick
- 2 tablespoons whole fennel seeds
- 1/2 teaspoon whole cloves
- Place all the ingredients in a small skillet over medium heat, and dry-roast, shaking the pan often, until they give off an aroma, about 5 minutes.
- Combine all the ingredients in a mortar or a spice grinder, and grind to a powder.
- Store in an airtight container in a cool, dark place.
