Round Red & Roast Beef Caesar Salad

  1. Slice potatoes thinly crosswise, and cook until fork tender.
  2. Drain potatoes; rinse in cool water, and drain again.
  3. Assemble salad.
  4. In a large bowl place lettuce and croutons from salad mix.
  5. Add potatoes, meat, and bell pepper slices.
  6. Toss gently with dressing.
  7. Spoon onto plates; sprinkle with grated Parmesan cheese as desired.
