Bacalao Recipe
- 1 1/2 lb Bacalao (Dry Cod Fish)
- 1/2 c. Onions, diced
- 1/2 c. Green peppers, diced
- 1/2 c. Tomato diced
- 1 Tbsp. Garlic, minced
- 2 Tbsp. Parsley, minced
- 2 Tbsp. Cilantro, minced
- 2 Tbsp. Tomato paste
- 1 c. White wine
- 2 x Large eggs Extra virgin olive oil
- 1.
- Cook bacalao, changing water at least three times.
- 2.
- Shred the bacalao and throw away the dark pcs.
- 3.
- In a separate pan, saute/fry the onions, peppers, tomatoes and garlic in extra virgin olive oil.
- Then add in the tomato paste.
- Deglaze with the white wine.
- 4.
- Add in bacalao.
- 5.
- Cook together for about 15 min.
- 6.
- Add in raw beaten Large eggs in the middle of the stew.
- Sirring continuously.
- 7.
- Add in herbs.
- Season to taste.
