Low-Fat Banana-Carrot Loaf

  1. Preheat oven to 350F, coat 9- by- 5 inch loaf pan with cooking spray.
  2. In a bowl combine applesauce, sugar and eggs, beat until light and fluffy.
  3. In separate bowl, combine flour, salt, baking soda, baking powder & cinnamon.
  4. Add to the batter and blend well.
  5. Fold carrots and banana into the batter.
  6. Pour batter into the prepared pan.
  7. Bake for 60-65 minutes or until toothpick inserted into the center comes out clean.
