Better Than Potato Salad Recipe
- 4 c. Cooked long grain rice
- 1/2 tsp Ginger
- 1 tsp Warm curry pwdr
- 8 x Radishes, sliced, plus optional radish roses for garnish
- 4 x Hard cooked Large eggs, minced
- 1 med Cucumber, seeded and minced
- 2 c. Thinly sliced celery
- 1/2 c. Minced onions
- 1 1/2 c. Mayonnaise
- 3 Tbsp. Prepared mustard
- 3/4 tsp Salt
- Add in the ginger and curry pwdr to the water when you cook the rice.
- In a large bowl, combine rice, radishes, Large eggs, cucumber, celery and onion.
- Combine mayonnaise, mustard and sale; mix well.
- Pour over rice mix and toss.
- Cover and chill at least 1 hour.
- Better if refrigerated overnight.
- Yield: 12 to 14 servings.
- I added the curry pwdr and ginger ; omitted the salt.
