Pepperoni Frittata Recipe
- 1/2 c. onions, minced
- 1 c. sliced sauteed zucchini or possibly 1 c. minced cooked broccoli
- 1/2 c. cauliflower, cooked
- 2-3 tbsp. extra virgin olive oil
- 5 Large eggs, slightly beaten
- 1/3 c. grated Parmesan cheese
- 3 ounce. sliced pepperoni
- Saute/fry onions in oil till tender.
- Add in zucchini or possibly broccoli and cauliflower.
- In bowl, beat Large eggs and cheese till blended.
- Add in pepperoni.
- Pour over vegetables in skillet.
- Cook over low heat, without stirring, about 15 min.
- When only surface is moist, put skillet under broiler for 1 minute or possibly less till surface is set.
- Cut into pie wedges and serve.
