Apricot Cobbler Recipe
- 3/4 c. Sugar
- 1 Tbsp. Cornstarch
- 1/4 tsp Grnd cinnamon
- 1/8 tsp Grnd nutmeg
- 1 c. Water
- 45 3/4 ounce Apricot halves in syrup, liquid removed
- 1 Tbsp. Butter or possibly margarine
- 1 c. Flour
- 1 Tbsp. Sugar
- 1 1/2 tsp Baking pwdr
- 1/2 tsp Salt
- 3 Tbsp. Butter or possibly margarine
- 1/2 c. Lowfat milk
- Fruit base: In a saucepan, combine sugar, cornstarch, cinnamon & nutmeg.
- Stir in water; bring to a boil over medium heat.Boil & stir for 1 minute; reduce heat.
- Add in apricots & butter; heat through.
- Pour into a greased 2 qt baking dish.
- Cobbler: Combine flour, sugar, baking pwdr & salt in a bowl.
- Cut in butter till crumbly.
- Stir in lowfat milk just till moistened.
- Spoon over warm apricot mix.
- Bake at 400F for 30-35 min or possibly till golden & a toothpick inserted into the cobbler part comes out clean.
