Lentil and Orange Soup
- 4 ounces split red lentils
- 1 12 pints stock
- 14 pint orange juice
- 12 orange
- 1 onion
- 2 sticks celery
- 14 teaspoon thyme
- 1 bay leaf
- salt
- pepper
- orange rind
- Place the lentils and 1/4 pint of the stock in a large microwaveable bowl, cover and microwave on full power for 2 minutes stirring halfway through.
- Stir in the onion, celery and thyme, cover and cook on full power for 7 minutes, stirring halfway through.
- Stir in 1 pint of the hot stock, add the orange juice and rind, bay leaf and season to taste.
- Cover and cook for 10 minutes stirring halfway through.
- Remove the bay leaf and add the remaining stock.
- Allow the soup to cool for a few minutes.
- Transfer the soup into a blender and puree.
- Return to the bowl and heat through for about 3 minutes on full power, stirring halfway through, until piping hot.
- Season to taste and serve garnished with the orange rind.
