Vietnamese Daikon-Carrot Pickle
- 12 cup rice vinegar
- 14 cup sugar
- 1 teaspoon salt
- 2 medium carrots, peeled and cut into matchsticks
- 12 lb daikon radish, peeled and cut into matchsticks
- Whisk the first three ingredients together until the sugar is dissolved, then add vegetables and toss to combine.
- Let stand, tossing occasionally, until the vegetables are wilted (about 15 minutes or so).
- Serve immediately or store for later use.
