French Herbed Baked Chicken

  1. Preheat oven to 350F.
  2. Season chicken pieces with salt and pepper and brown in shortening in a frying pan.
  3. Place in a 2 quart casserole.
  4. Brown the onions, carrots, celery and mushrooms.
  5. Drain off the fat, then stir in the spices, and wine.
  6. Pour all of it over the chicken.
  7. Cover casserole and bake for 75 minutes.
  8. Remove bay leaf before serving.
