Applesauce Peanut Butter, Chocolate and Dried Fruit Coffee Cake
- 2 tablespoons butter melted
- 2 tablespoons canola oil or olive oil
- 3/4 cup peanut butter
- 1 large eggs
- 1 cup applesauce
- 1 cup whole wheat flour or white whole wheat flour
- 1/4 cup bran
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon cinnamon ground
- 1/4 teaspoon nutmeg ground
- 1/2 cup chocolate chips (semi-sweet)
- 1/4 cup apricots, dried chopped
- 1/4 cup prunes chopped
- 1/2 cup cranberries, dried chopped
- Preheat the oven to 350F (180C).
- Add the butter, canola oil, peanut butter, egg and applesauce in a medium bowl, and mix until well blended.
- Mix together the flour, baking soda, salt, cinnamon and nutmeg in a large bowl until well combined.
- Pour the liquid mixture into the flour mixture, and mix with a woonden spatula until well just incorporated.
- Pour the batter into a well greased 8-inch square pan or a similar capacity baking pan.
- Bake for about 40 minutes or until a wooden pick inserted in the center comes out clean.
- Cool, in the pan, for 10 minutes and cut into squares.
- Serve warm or at room temperature.
- The cake can be kept in an air-tight container in the frige for up to 1 week or frozen up to 1 month.
- Note: You can add whatever dried fruits you like.
- If you don't have oat bran, you can use wheat bran or ground flax seed meal or ground oats instead.
