Risotto Parmesan a la Milanese
- 1-1/4 qt. (5 cups) fat-free reduced-sodium chicken broth
- 2 Tbsp. butter
- 2 Tbsp. extra virgin olive oil
- 1/4 cup chopped onions Safeway 3 lb For $2.99 thru 02/09
- 1-1/2 cups Arborio rice, uncooked
- 1/2 cup dry white wine
- 1/2 cup KRAFT Grated Parmesan Cheese
- 1/4 tsp. ground black pepper
- Heat broth in medium saucepan.
- Meanwhile, melt butter with oil in large saucepan on medium-high heat.
- Add onions; cook 3 min.
- or until tender, stirring frequently.
- Add rice; cook and stir 2 min.
- Stir in wine; cook 1 min.
- Add 1 cup broth; cook and stir until absorbed.
- Repeat with remaining broth, adding 1 cup at a time, until all broth has been added and absorbed by the rice.
- Stir in cheese and pepper.
