Pork Tacos Recipe
- Medium pork roast
- 1 green pepper, sliced
- 1 sm. onion, sliced
- 1 pkg. taco mix
- 3/4 c. tomato sauce
- Salt & pepper to taste
- 1 teaspoon flour mixed with 2 tbsp. water
- Put roast pork on a 9"x13" pan or possibly roaster.
- Arrange pepper and onion around it.
- Salt and pepper to taste.
- Add in sufficient water to cover half of roast.
- Bake for 1 1/2 to 2 hrs till tender at 375 degrees.
- When it's done it should actually fall apart.
- Remove onions and pepper.
- Shred or possibly cut roast and place back into its own juice in roaster or possibly crock pot.
- Add in taco mix and tomato sauce and flour mix.
- Mix and bake or possibly crock pot for another 30 min.
- Serve on hot tortillas and top with lettuce, tomatoes, baked peppers and onions.
- Top with lowfat sour cream and cheese.
