Cactus Salad / Ensalada de Nopales
- 30 ounces, weight Jar Nopales, Drained And Rinsed Well (feel Free To Sub Fresh Nopales)
- 1 whole Medium White Onion, Diced
- 4 whole Roma Tomatoes, Diced
- 1/2 bunches Cilantro, Chopped
- 1 whole Jalapeno, Diced (dont Remove Seeds)
- 1/2 teaspoons Cumin
- 1/2 teaspoons Mexican Oregano
- 2 whole Limes, Juiced
- 1/2 cups Cotija Cheese (optional)
- 1.
- Drain and rinse the nopales in a colander.
- Set them aside in a dish.
- 2.
- Add the diced onion, tomatoes, cilantro, jalapeno, cumin and oregano to the dish with nopales.
- Mix it well.
- 3.
- Take the lime juice and pour over the top of the mixture of nopales.
- Sprinkle cheese on top (if desired).
- 4.
- Refrigerate about 1 hour before serving.
- Serve on top of carnitas or any favorite taco!
