Vegetable Medley In Cheese Sauce Recipe
- 2 teaspoon butter
- 1/4 c. onion
- 1 tbsp. and 1 1/2 teaspoon all purpose flour
- 1 c. skim lowfat milk
- 2 ounce. sharp Cheddar cheese (shredded)
- 1/4 teaspoon Worcestershire sauce
- Salt and pepper to taste
- 2 c. each of cooked broccoli and sliced carrots
- 1/2 c. cooked spiral macaroni
- Heat butter over medium heat till bubbly and warm, add in onion and cook about 2 min.
- Add in flour and stir till completely combined.
- Remove pan from heat and stir in lowfat milk and return to medium heat and cook.
- Stirring constantly till mix is smooth and thickened.
- Reduce to low heat and add in cheese and seasonings; stir constantly till cheese is melted and mix is thoroughly blended.
- Add in vegetables and macaroni.
- Stir gently till macaroni and vegetables are thoroughly coated with sauce and heated.
- Makes 2 servings.
