Pumpkin Pecan Bread
- 1-1/4 cups firmly packed brown sugar
- 1 cup canned pumpkin
- 1/2 cup MIRACLE WHIP Dressing
- 1/4 cup 2% reduced fat milk
- 2 eggs
- 2 cups flour
- 2 tsp. CALUMET Baking Powder
- 1-1/2 tsp. ground cinnamon
- 1/2 tsp. salt
- 1/2 tsp. ground ginger
- 1/4 tsp. ground cloves
- 1/2 cup chopped pecans
- Heat oven to 350F.
- Mix sugar, pumpkin, dressing, milk and eggs until well blended; add to combined dry ingredients, mixing just until moistened.
- Fold in pecans.
- Pour into greased and floured 9x5 inch loaf pan.
- Bake 55 to 60 minutes or until wooden toothpick inserted in center comes out clean.
- Cool 10 minutes; remove from pan.
- Cool completely.
