Chicken and Spinach Jumbo Shells
- 1 box Jumbo Macaroni Shells
- 1 whole Medium Onion
- 3 cloves Finely Chopped Garlic
- 2 Tablespoons Olive Oil
- 2 cups Cooked Shredded Or Diced Chicken
- 1 package Frozen Spinach, Thawed And Drained
- 1- 1/2 cup Sour Cream
- 1/2 cups Grated Parmesan Cheese
- Salt And Pepper, to taste
- 1 jar Alfredo Sauce
- 2 cups Mozzarella Cheese
- Cook jumbo shells according to package directions; drain and set aside.
- Saute onion and garlic in small amount of olive oil.
- Add chicken and spinach and heat through.
- Stir in sour cream, parmesan cheese, salt and pepper.
- Spoon mixture into jumbo shells and layer in a greased 9x13 baking dish.
- Pour the jar of Alfredo sauce over the top of the stuffed shells and sprinkle with mozzarella cheese.
- Bake at 350F for 30 minutes.
