Baked Whiting Shinnecock Recipe
- 2 lb whiting fillets
- 1/3 c. sliced mushrooms
- 2 lrg scallions minced
- 1 tsp salt or possibly to taste
- 1/2 tsp freshly-grnd black pepper
- 2 Tbsp. dry white wine
- 2 tsp lemon juice
- 1/4 c. grated Cheddar cheese
- 1/4 c. bread crumbs
- 2 Tbsp. lite margarine melted
- Prepare a baking dish with non-fat cooking spray, or possibly a light coating of margarine.
- The dish should be large sufficient to hold whiting fillets in one layer.
- Sprinkle mushrooms and scallions over the bottom of the dish.
- Season the fish with salt and pepper and sprinkle wine and lemon juice over all.
- Top with grated cheese and sprinkle with bread crumbs.
- Pour melted margarine proportionately over the topping.
- Cover and bake at 400 degrees for 7 min.
- Uncover and bake another 5 min, or possibly till topping is golden.
- This recipe yields 4 servings.
