Bangladeshi Beef and Rice

  1. Prepare rice according to package directions.
  2. Heat oil in a medium skillet over medium heat.
  3. Add onion; cook and stir until the onion has softened, about 5 minutes.
  4. Stir in the garlic, jalapeno pepper and curry powder.
  5. Add beef and 1 cup broth.
  6. Reduce heat to medium-low, cover and cook 15 minutes, or until beef is cooked through and onions are tender and brown.
  7. Combine remaining broth and cornstarch.
  8. Increase heat to high and stir in cornstarch mixture.
  9. Bring to a boil, stirring constantly.
  10. Cook 1 minute.
  11. Serve over rice.
  12. Garnish with green onion, if desired.
