Bangladeshi Beef and Rice
- 2 bags Success Basmati Rice
- 1 Tbsp. vegetable oil
- 1 small onion, chopped King Sooper's 1 lb For $0.99 thru 02/09
- 2 cloves fresh garlic, minced
- 1 jalapeno pepper, sliced
- 2 Tbsp. curry powder
- 1 lb. boneless beef sirloin steak, thinly sliced Whole Foods 1 lb For $7.99 thru 02/09
- 1-1/2 cups beef broth, divided
- 1 Tbsp. cornstarch
- salt and ground black pepper, to taste
- sliced green onions, optional King Sooper's 1 lb For $0.99 thru 02/09
- Prepare rice according to package directions.
- Heat oil in a medium skillet over medium heat.
- Add onion; cook and stir until the onion has softened, about 5 minutes.
- Stir in the garlic, jalapeno pepper and curry powder.
- Add beef and 1 cup broth.
- Reduce heat to medium-low, cover and cook 15 minutes, or until beef is cooked through and onions are tender and brown.
- Combine remaining broth and cornstarch.
- Increase heat to high and stir in cornstarch mixture.
- Bring to a boil, stirring constantly.
- Cook 1 minute.
- Serve over rice.
- Garnish with green onion, if desired.
