Chicken and White Bean Soup
- 2 (15 ounce) cans great northern beans (divided use)
- 4 cups water (divided use)
- 1 12 cups chopped onions
- 12 cup chopped red and green bell pepper
- 2 garlic cloves, minced
- 1 12 tablespoons butter
- 2 tablespoons chicken bouillon powder
- 1 (4 ounce) can diced green chilies
- 1 cup white corn, thawed if frozen
- 1 teaspoon ground cumin
- 12 teaspoon cayenne powder
- 5 cups diced fajita chicken (cooked)
- fresh minced cilantro
- Using a blender, blend one drained can of white beans with 1 cup of water until smooth.
- Saute onions, peppers and garlic in butter over medium-high heat until golden brown.
- Transfer to a crock pot.
- Place the remaining ingredients except the chicken and garnishes into the crock pot and cook on low for 3 hours.
- Add the chicken and keep warm on low until ready to serve.
