Grilled Chicken Under a Brick with Peach BBQ Sauce

  1. Clean 2 bricks thoroughly then cover with tinfoil.
  2. Butterfly the chicken.
  3. There are lots of sources online if you are unsure how to butterfly a bird.
  4. Or see my photo.
  5. Use olive oil and peach whiskey sauce to marinate the chicken for 30 minutes.
  6. Just brush it on and leave in a container covered in the refrigerator while you prep your grill.
  7. Oil the grates of your grill before you fire it up.
  8. Preheat the grill on high.
  9. Turn heat down to low and put your chicken on.
  10. Set a brick or two on top of the chicken.
  11. Close lid and leave it alone for about 15 minutes.
  12. Once the side down is crisp turn chicken over and do the same thing.
  13. Leave it to cook for another 15 minutes.
  14. Now flip it again and brush generously with barbecue sauce.
  15. Cook for another 5 to 15 minutes depending on size of bird.
  16. Remove and let stand for 5 to 10 minutes.
  17. Serve with a smile.
