Chicken Curry
- 5 tbsp. vegetable oil
- 1/2 qt. curry sauce
- 1 lb. chicken cooked (*)
- 1 tsp. salt
- 1 dash chili powder
- 1 tsp. garam masala
- 1/2 tsp. ground cumin
- 1 dash ground fenugreek
- 1/2 tomato, thinly sliced
- 1 tbsp. finely chopped green coriander
- Heat the oil in a large dep frying pan.
- Add the curry sauce and bring to a boil.
- Without reducing the heat, add salt, chili powder and chicken; continue cooking for about 5 minutes.
- Reduce heat and stir in garam masala, cumin and fenugreek; simmer for a further 2-3 minutes.
- Put the sliced tomato and half the coriander and cook another 2 minutes.
- Skim off any excess oil, garnish with remaining coriander and serve.
