Make It Quick Shrimp-Stuffed Avocado

  1. Finely chop shrimp and place in a small bowl.
  2. Add mayonaise, cilantro & juice of 2 lime wedges.
  3. Season with salt & pepper.
  4. In a medium bowl, toss lettuce with oil & juice from remaining 2 lime wedges.
  5. Divide lettuce between two plates.
  6. Cut avocados in half lengthwise, remove pit & peel.
  7. Place an avocado half on each plate and mound shrimp salad on top of it.
  8. You can substitute tuna for the shrimp as well - just drain very well.
