Coconut Jasmine Rice

  1. In a large saucepan, combine the water, coconut milk, and salt.
  2. Add the rinsed rice and lime leaves and bring to a boil.
  3. Cover and simmer over low heat for 12 minutes.
  4. Keeping the pan covered, turn off the heat and let the rice stand for 5 minutes.
  5. Uncover and fluff the rice.
  6. Discard the lime leaves and serve.
