Heavenly Island Bundt Cake

  1. Preheat oven to 350F Prepare a large bundt pan with a light coating of cooking spray.
  2. Take the bar of chocolate and break it up into small shards.
  3. Similarly, chop the macadamia nuts into pieces.
  4. In a large bowl mix together the cake mix, water, egg whites and applesauce.
  5. Beat with mixer for 2 minutes.
  6. Add the chocolate, coconut and macadamia pieces to the batter, stirring to fully incorporate.
  7. Pour the batter into the bundt pan and bake 35-40 minutes.
  8. The cake should be resistant to touch and a toothpick or bamboo skewer should come out clean if inserted into the middle of the cake.
  9. Cool in pan 10 minutes before inverting onto a serving plate.
  10. Allow to completely cool before serving.
