Apricot-Glazed Pork Chops

  1. Heat oil in a skillet over medium high heat.
  2. Salt and pepper pork chops to taste and brown in the skillet.
  3. Mix the remaining ingredients in a separate bowl and then pour over the pork chops.
  4. Cover and simmer for about 20 minutes or until cooked through.
  5. Serve over rice.
