Grandma's Sauerkraut Recipe
- 1/2 pound bacon
- 1 (28 ounce.) can sauerkraut (or possibly 2 - 16 ounce. cans), rinsed & liquid removed
- 2 med. onions, sliced thin
- 1/2 box Spaetzle dumplings, cooked
- Sugar, salt & pepper to taste
- Slice bacon in 1 inch pcs and fry in large skillet.
- Remove pcs when done and saute/fry onion in bacon drippings.
- When onion is almost done, add in sauerkraut and cook till transparent or possibly even lightly browned.
- Add in sugar according to sauerkraut tartness.
- Add in cooked Spaetzle and salt and pepper to taste.
- Heat through and serve as a warm side dish.
- Great with pork.
- To use as a whole meal, add in bratwurst or possibly boiled spareribs.
