Baked Apples with Creamy Vanilla Bean Custard

  1. CUT each apple horizontally into three slices, place in a large shallow baking dish with the wine and cinnamon.
  2. Sprinkle over the brown sugar.
  3. Bake in a moderate oven 180C for 20 minutes until tender.
  4. Spoon the syrup over the apples occasionally.
  5. WHISK together the PHILLY and milk in a saucepan until smooth.
  6. Add the sugar, vanilla bean and custard powder paste.
  7. Bring to the boil, stirring until custard has thickened, discard the vanilla bean.
  8. REMOVE apples from syrup and arrange on serving plates, then pour over the custard.
  9. Serve immediately.
