Chicken Soup

  1. Heat chicken skin, ginger, leek (green part), sake, water and salt in a pot.
  2. When it comes to a boil, skim off the scum, and turn down the heat to low.
  3. Simmer for about 5 minutes.
  4. Remove the chicken skin, ginger and the leek from the pan, and add soy sauce and julienned leek.
  5. Simmer for 2 -3 minutes.
  6. Pour beaten egg, and season with pepper.
  7. Heat until the egg is cooked.
  8. It's ready to serve.
  9. You could make egg and chive soup.
  10. This version is tasty too.
