Kiki's Authentic Tiramisu
- 4 eggs, separated
- 6 tablespoons sugar
- 1 tablespoon marsala wine
- 1 lb mascarpone cheese
- 1 lb savioiardi biscuit
- 1 12 cups strong espresso, at room temperature
- cocoa powder
- 4 ounces shaved or grated dark baker's chocolate
- Beat egg yolk.
- Add 4 tablespoons of the sugar and the Marsala wine and beat until thick and creamy.
- In a separate bowl, beat egg whites and all remaining sugar until thick peaks form.
- Fold in half the mascarpone into the yolk mixture.
- Fold in the other half of the mascarpone into the egg whites.
- In a deep pan, start the layering by dipping the savioiardi into to the espresso and lining the entire bottom of it with the cookies.
- Top with egg yolk mixture.
- Sprinkle with cocoa powder.
- Do another layer of savioiardi.
- Then do a layer of egg white.
- Sprinkle with cocoa powder.
- Keep layering alternately like that.
- When finished, top with shaved or grated chocolate.
