Lemon and Spice Chicken Skewers

  1. Combine the yoghurt, lemon juice, spices and seasoning.
  2. Spoon half the mix into a shallow bowl, then add the chicken and coat.
  3. Set aside the remaining mix.
  4. High the grill or broiler to high.
  5. Thread the chicken onto 8 metal skewers.
  6. Cook for 3-4 mins each side.
  7. To serve:.
  8. Pile the lettuce and mint onto the pita bread, top with the skewers, squeeze over the lemon juice and serve with a spoonful of the reserved yoghurt mix.
