Beefy Tostada Pies Recipe
- 2 tsp extra virgin olive oil
- 1 1/2 c. minced onion
- 2 lb grnd beef
- 1 tsp chili pwdr
- 1 tsp grnd cumin
- 1 tsp salt
- 2 x cloves garlic chopped
- 1 can tomato sauce (15 ounce.)
- 1 c. sliced black olives
- 8 x flour tortillas
- 4 c. shredded Cheddar cheese Lowfat sour cream, salsa and minced green onion optional
- Heat oil in large skillet over medium heat.
- Add in onions and cook till tender.
- Add in grnd beef, chili pwdr, cumin, salt and garlic; cook till browned.
- Stir in tomato sauce; heat through.
- Stir in black olives.
- Make foil handles using three 18x2" strips of heavy foil.
- Crisscross foil to create spoke design.
- Place in slow cooker.
- Lay one tortilla on foil strips.
- Spread with meat sauce and layer of cheese.
- Top with another tortilla, meat sauce and cheese.
- Repeat layers ending with cheese.
- Cover and cook on High 1-1/2 hours.
- To serve, lift out of slow cooker using foil handles and transfer to serving platter.
- Throw away foil.
- Cut into wedges.
- Serve with lowfat sour cream, salsa and minced green onion, if you like.
- Makes 4-5 servings.
