Key Lime Cheesecake Parfaits
- 1 cup butter
- 1 cup sugar
- 3 cups graham cracker crumbs
- 3 qt. JELL-O Brand Cheesecake Filling Mix
- 3 qt. milk
- 6 Tbsp. grated lime peel
- 1-1/2 qt. lime juice Safeway 3 ct For $1.00 thru 02/09
- 1-1/2 qt. prepared DREAM WHIP Whipped Topping
- Melt butter in small skillet.
- Add sugar; cook until bubbly, stirring occasionally.
- Add graham crumbs; cook until golden brown, stirring occasionally.
- Transfer to plate; set aside to cool.
- Prepare cheesecake mix according to package directions.
- Stir in lime zest and juice.
- Spoon 1/4 cup of the cheesecake mixture into each of 48 parfait glasses (or 8 parfait glasses for trial recipe); top with layers of 1 Tbsp.
- of the crumb mixture and an additional 1/4 cup of the cheesecake mixture.
- Sprinkle evenly with remaining crumb mixture.
- Refrigerate 2 to 3 hours or until firm.
- Top each parfait with 2 Tbsp.
- of the whipped topping just before serving.
