Key Lime Cheesecake Parfaits

  1. Melt butter in small skillet.
  2. Add sugar; cook until bubbly, stirring occasionally.
  3. Add graham crumbs; cook until golden brown, stirring occasionally.
  4. Transfer to plate; set aside to cool.
  5. Prepare cheesecake mix according to package directions.
  6. Stir in lime zest and juice.
  7. Spoon 1/4 cup of the cheesecake mixture into each of 48 parfait glasses (or 8 parfait glasses for trial recipe); top with layers of 1 Tbsp.
  8. of the crumb mixture and an additional 1/4 cup of the cheesecake mixture.
  9. Sprinkle evenly with remaining crumb mixture.
  10. Refrigerate 2 to 3 hours or until firm.
  11. Top each parfait with 2 Tbsp.
  12. of the whipped topping just before serving.
