Southwest Meatloaf
- 2 lb ground beef
- 1 lb ground sausage
- 1 medium onion
- 2 large green bell peppers
- 3 eggs
- 2 packages taco seasoning
- 1 tbsp salt
- 2 tbsp black pepper
- 10 oz bag tortilla chips
- 24 oz picante sauce (not chunky)
- Mix together beef and sausage in large mixing bowl.
- Dice onion and bell peppers.
- Add to meat mixture and combine.
- Preheat oven to 375F.
- In seperate bowl whisk 16oz.
- picante sauce, eggs, taco seasoning, salt, and pepper until smooth.
- Reserve 8oz picante for later.
- Pour wet ingredients into meat mixture and combine well.
- (I use my hands)
- Crush chips finely and add about half to the meat mixture.
- Continue mixing and slowly add more until the mixture starts to get firm.
- Split mixture into 2 loaf pans.
- My pans are about 4x8in or so.
- (I use the "perfect meatloaf" pans.
- They are awesome!)
- Bake at 375F for 1 hour.
- Remove from oven.
- Use remaining picante sauce and baste tops of each loaf with basting brush.
- Return to oven for 10 minutes.
- Let cool for 5 minutes, slice, serve, and enjoy!
- My family doesn't like spicy foods so I generally use mild picante sauce.
- I make this meatloaf for my coworkers using medium or even hot picante for the extra "kick".
- This meatloaf will make even people that genarally hate meatloaf, beg you to make it again!
- It's great with the standard ketchup on top or even with brown gravy.
