Tomato Jam
- 1 pint grape tomatoes, halved
- 1 tablespoon olive oil
- 2 tablespoons sugar
- 1 lemon, juice of
- Place everything in a saucepan over high heat.
- Bring to a boil, then reduce heat to medium-low and simmer 30 minutes, until most of the liquid has evaporated and the jam is quite thick.
- Cool to room temperature before serving.
